We had so many delicious submissions from our readers for our Winter 2017/Dining In issue. Unfortunately we couldn’t print them all! Here’s a short ribs recipe from our friend Victoria of Bella Angel Hair and Makeup!
5 pounds boneless beef short ribs, 3-inch pieces
Kosher salt and freshly ground black pepper
1 cup light brown sugar
1 teaspoon paprika
1 teaspoon garlic powder
1 tablespoon white vinegar
1/2 teaspoon dried ground thyme
1 cup ketchup
1 tablespoon yellow mustard
Preheat the oven to 300 degrees F. In a bowl, combine all of the ingredients except salt and pepper and stir. Toss the ribs in the sauce, coating all the pieces and then arrange into a 13 by 9″ baking dish sprinkle salt and pepper to taste. Cover with aluminum foil and roast for about 3 1/2 hours. Remove the foil during the last 30 minutes of cooking to brown the top. Transfer to a serving platter and serve. I served over brown and red rice.
