Jansen Celebrates Nine Year Anniversary with Exclusive Laurent-Perrier Champagne Dinner

With October 2024 marking nine years of success, memories, and exquisite contemporary New American cuisine, Chef David Jansen’s eponymous restaurant Jansen is keeping the celebrations rolling with the announcement of an inaugural Laurent-Perrier Champagne Dinner slated for Thursday, November 14 with one seating only at 6:30pm. 

“Our upcoming Laurent-Perrier Champagne Dinner is a can’t miss event that showcases the things we do best here at Jansen,” said Zachary Bourne, General Manager at Jansen. “This is an opportunity guests to either experience for the first time or relive Chef Jansen’s luxurious tasting menus from The Fountain at the Four Seasons. We are privileged to be hosting one of the world’s premier Champagne producers in Laurent-Perrier, showcasing the versatility of its Champagnes in each of the five courses.”  

Jansen’s unparalleled culinary team meticulously curated a five-course tasting menu to pair perfectly with a flight of iconic Champagne varietals from Laurent-Perrier, one of the world’s largest and historic Champagne producers since 1812. The opulent multi-course tasting dinner, which includes a glass of Champagne with each course, features the following: 

RECEPTION: La Cuvée Brut
Caviar Crisp, Whipped Crème Fraîche, Chives
Foie Gra en Croûte
Tuna Tartare on Rice Crisp 

FIRST COURSE: Laurent-Perrier Extra Brut 
Seared Scallop with apple salad, celery root risotto, lemon, and scallop
Champagne cream 

SECOND COURSE: Laurent-Perrier Brut Millesime
Chilean Seabass poached on olive oil, Haruki turnips, and uni beurre blanc 

THIRD COURSE: Laurent-Perrier Cuvée Brut
Roasted Pheasant Breast with blistered radicchio salad, cherries, pheasant confit, fennel yuzu dressing, and natural jus 

ENTRÉE: Laurent-Perrier Grand Siècle, Grand Cuvée
Veal Medallion with vanilla, salsify, Serrano, truffled creamed spinach, and veal glaze 

DESSERT: Laurent-Perrier Harmony Demi Sec
Financier with brown buttercream, sweet poached quince, and lavender
